With eggs on top


I've been asked a couple times why I must throw an egg on top of almost everything I make. Here are just a few reasons:
1) Eggs are delicious
2) I'm not very good at sauces - so an egg on top helps give a dish some depth in both flavor and texture
3) After working out hard I crave eggs. It could be a protein thing.
4) We get a dozen eggs every other week in our CSA (Community Supported Agriculture) bag from our local farmer who only has happy heritage chickens. I wouldn't dare let a single one go to waste.
After our 5k run I was craving breakfast for dinner. And as the growing season is winding down I don't have a ton of veggies to choose from - so potatoes, onions and eggs it is.
I started out by slicing the potatoes about 1/8" thick. From there I laid them single layer into some hot sunflower oil in my cast iron pan. I layered thinly sliced onions on top and sprinkled spicy taco seasoning on top. In hindsight - I wish I had added some mushrooms to the mix. It took about 10 minutes on each side for the potatoes to brown. Once they were close to being ready I fried some eggs to finish off the dish. Simple and delicious.







I don't eat eggs but you make them look delicious!
You have got to stop with the recipes! You are going to make me fat! = )

Caroline - there really isn't much that's unhealthy with these! Just a couple tbs of oil for cooking. So, go for it!
All of your eggs-on-top dishes remind me of one of my favorites, via Orangette: Cabbage with Hot Sauce (http://orangette.blogspot.com/2009/01/best-we-can-hope-for.html). It's simple, delicious, good with an egg on top (and good with or without the optional fennel). Try it, it's awesome!
Haha! I was totally wondering the same thing every time you post food. But then again, I get it b/c I love a egg over-easy with the silky yolk. Yum! my husband doesn't really get it though.
The other day I put egg on top of my veggie burger. You inspired me to try the egg on top of something. It was good, and a nice dose of protein. Thanks for the tip.

I keep seeing this picture (cuz I stalk you) and thinking Mmmmmmmmmmmmmmmmmmm. But then I look a little longer and realise that if I was given this plate, I would move the eggs off and eat them separately. [I couldn't even do sheppards pie when I was young, it grossed me out, I have gotten MUCH better over the years]
p.s. I think my hair is doing better.
So what, exactly, CSA thingy do you use? I have tried various (Co-op, Farmers Market, etc) and yet to find one I am 100% satisfied with.
i think eggs are the perfect food. i eat them at least 5 times a week.
